Banana Crumb Paleo Muffins

I might get some flack for this recipe, because the whole point of eating paleo is to eat healthy, not so much to just adhere to ingredients (which I don't even do here since baking soda isn't strictly paleo), because then you just crave the real thing apparently. That might be true, but I think if you can satisfy your craving with something healthier, that's good too: my personal opinion. One of my Paleo cooking partners requested banana bread for breakfast and I like the muffin format because I can take it to go, so this is my solution. And I think it is pretty healthy overall As a warning, this recipe isn't sweet at all (because it is so healthy!), it is good and banana-y though, but I've thought about adding apple sauce to make it sweeter.

Ingredients (for 36 muffins)

4.5 cups  Almond meal
3 tsp        Baking powder
1/2 tsp     Salt
1              Orange, squeezed
7              Bananas, mashed
3              Eggs
3/4 cup    Almond oil

For crumb topping:
3 tsp        Cinnamon
3 tbs        Coconut oil
2 cup       Almond meal


1. Preheat oven to 375F
2. Make the crumb topping first by microwaving the coconut oil until softened, and then mixing in almond meal and cinnamon, it may appear mushy if coconut oil became liquid, so stick it in the freezer to form
3. Mix rest of ingredients in a large bowl
4. Use coconut oil spray to lightly grease your muffin papers (or I use silicone, best investment ever to prevent sticking) and divide the muffin mixture evenly
5. Remove crumb topping from freezer and sprinkle on top of each muffin
6. Place into oven and bake for approximately 15-20 minutes, or until you can stick a toothpick in center and it comes out clean
