Easy Paleo Bison Curry with Cauliflower Rice

This is also a super easy recipe, I think I was lazy this week I made all this. The only difference is that I'm adding zucchini to this recipe (which isn't in the picture because I didn't put it in), but it was too meaty for us, so I think some zucchini might help.

Ingredients (for 12 servings)

3 lbs ground bison meat
3 cans of lite coconut milk
3 onions, chopped
6 large zucchini 
3 tablespoons organic curry spice
1 cup fresh basic, chopped or ripped
Coconut oil spray

Cauliflower Rice

3 heads of cauliflower,
Pepper to taste
Coconut oil spray


1. Chop onions and zucchini and set aside
2. Lightly coat pan with coconut oil spray and sautee bison meat until brown and set aside
3. Cook onions and zucchini until onions are translucent
4. Add bison meat back in as well as coconut milk and curry spice and simmer for around 20 minutes, mixing well to avoid the bottom burning
5. Remove and top with fresh basil
6. Take three heads of cauliflower and put them into food processor until consistency of rice
7. Stir-fry cauliflower with a little coconut oil spray to coat pan and pinch of pepper to taste
