Paleo Chicken Cacciatore

Here's a recipe for Chicken Cacciatore, which is overall pretty simple to put together. We ate it with a side of baked squash.

 Ingredients (for 12 servings)

14 chicken breasts
3 teaspoons salt
3 teaspoons pepper
1.5 cups almond flour
Coconut oil spray
3 large red bell peppers
3 onions
9 garlic cloves
1 can of organic diced tomatoes with juice
1 can (28 ounce) of organic crushed tomatoes
1 can of organic tomato paste without salt
7 tablespoons drained capers
1.5 cups of low sodium chicken broth
4.5 teaspoons dried oregano
1 teaspoons celery seed
20 ounces of sliced mushrooms
1 cup chopped basil


9 squash
Salt and pepper to taste


1. Preheat oven to broil
2. Sprinkle chicken breasts with salt and pepper and dredge with almond flour (difficult to do, I ended up just sprinkling onto both sides)
3. Spray 2 large baking pans lightly with coconut oil to coat and layer chicken into pay
4. Broil each side of chicken until brown on all sides
5. Chop large red bell peppers into 8 pieces, and toss into large pot
6. Chop onion in half, and each half into 4 quarters for 8 sections, and toss into large pot
7. Press garlic into large pot
7. Add capers, oregano, celery seed, mushrooms, and low-sodium chicken broth to large pot
8. Open cans of tomatoes (crushed, diced, and paste) and add each to large pot
9. Add chicken to large pot
10. Simmer mixture on low heat for 2-3 hours
11. Top with fresh basil


1. Preheat oven to 400F
2. Chop squash and salt and pepper to taste
3. Bake for 15 minutes or until tender
4. Serve as side to Chicken Cacciatore
