Paleo Beef Stew with Side of Mashed Carrots and Turnips


So one popular method for making beef stew is to toss in French Onion Soup mix... but given this is supposed to be Paleo, I made something similar to French Onion Soup from scratch to be combined with the beef. Tossed it all into the slow cooker, and out came the Paleo Beef Stew, served with side of mashed carrots and turnips.

Ingredients (for 16 servings)


7 lbs sirloin tip roast
30 ounces of mushrooms, chopped
2 onions, chopped
2 tsp salt
2 tsp pepper
2 tablespoon balsamic
2 tablespoon coconut aminos
1/2 cup red wine
2 tsp cajun spice
2 springs rosemary
4 springs thyme
4 bay leaves
1.5 cups low sodium vegetable broth
1.5 cups almond flour
1 can organic diced tomatoes

Mashed Carrots and Turnips

2 2lb bags of baby carrots
5 turnips
1 ounce package of fresh chives, chopped

Directions


1. Cube sirloin tip roast into approximately 1-1.5" cubes
2. Place mushrooms, onions, sirloin, salt, pepper, balsamic vinegar, coconut aminos, red wine, cajun spice, rosemary, thyme and bay leaves into slow cooker and top with 1.5 cups of low sodium vegetable broth

3. Turn slow cooker to low for 16 hours
4. After a few hours, the liquids from the mushroom will begin to come out and your crock pot might look particularly full, scoop out 2 cups of broth and set aside
5. Shred turnips and chop into thirds or so
6. Boil two large pots of water and place half of carrots and turnips in one pot and the rest in the other pot
7. When both carrots and turnips are soft (carrots will take longer), mash them together with a dash of salt and pepper
8. Top off mashed carrots and turnips with chopped fresh chives
9. Take broth set aside from crock pot and add almond flour and simmer on low heat for 10 minutes until mixture thickens
10. Add can of diced tomatoes to broth and flour mixture and allow it to simmer and thicken on low heat for another 10 minutes, mixing regularly to avoid burning
11. Add mixture to crock pot (or alternatively since we were dividing the stew into 4 portions, you can divide the mixture into the containers if your crock pot is full and then divide up the stew seperately)
12. Mix contents of crock pot together before serving with a side of mashed carrots and turnips
