Tuna Salad Lettuce Wraps with Homemade Mayonnaise


Did you know you can make your own mayonnaise?! I didn't even know what mayonnaise was until I started my paleo diet, and it is surprisingly easy (10 minutes) and without any other processing chemicals when you make it yourself! This entire recipe is actually super easy, and was a big hit with my cooking partners because it mixed up our lunch regimen.

 Ingredients (for 12 servings)

12 cans of tuna in water, drained (I used Wild Planet brand)
1.5 cups of celery, chopped
1 cup of raw walnuts, chopped
1 bunch of green onions (around 4 stalks), chopped tops only
2 heads of butter lettuce

Mayonnaise (prepare 1 hour prior if possible):

4 egg yolks
1 lemon, juiced
1 teaspoon dried mustard
2 tablespoons apple cider vinegar
1.5 cups of walnut oil

Directions

1. Use a blender and place 4 egg yolks with lemon juice, mustard and vinegar, and pulse blender
2. Mix in half a cup of the oil, and pulse blender, repeat until all 1.5 cups used
3. Allow mayonnaise to sit at room temperature for an hour or so (according to Alton Brown, this allowed the lemon/vinegar to kill bacteria in eggs, who knows)
4. Chop celery, walnuts and green onions, and place in a bowl with drained tuna
5. Mix in homemade mayonnaise
6. Separate leaves of butter lettuce to be used as the wrap to hold tuna salad
