This recipe was contributed by Graeme Mallace during my Whole 30 experience in May 2012. I made it then, but then continued to make it several times because it is a good snack, and also fun to mix new things into the meatballs. He agreed to let me repost this as long as I credit him, and promise not to change the name of the meatloaf minis into the various humorous names I've given it over the last few months.
Ingredients (for around 24 meatballs)
3 lbs Ground beef
1 1/2 Onions, finely chopped
1 fist sized Sweet potato, finely diced
3 cloves Garlic, minced
2 Large eggs
2 tsp Salt
2 tsp Black pepper
3 tbs Fresh Italian parsley, chopped
3/4 cup Tomato paste
Coconut oil spray

1. Preheat oven to 375 F
2. Combine all ingredients together in a large mixing bowl
3. Spray large baking tray with coconut oil
4. Roll meat mixture into small meatballs around 1.5-2" in diameter
5. Bake at 375 F for around 15-20 minutes (sometimes it is helpful to drain the juices midway through)
