These are a great grab n' go breakfast that I eat in the car on the way to work. The idea came when a friend of mine says he loves peanut butter and jelly sandwiches, which isn't on the Paleo diet. So I thought, how can I turn this into a Paleo food? The answer? Use almond butter and real fruit. The key to this recipe is using non-stick silicone baking cups (not the paper in the picture), otherwise it sticks to the paper and sucks to eat.
Ingredients (for 36 servings)
16 Large eggs
1/2 cup Coconut milk
2 tbs Almond meal
2 cups Fresh berries (I've used blueberries, blackberries and raspberries)
1.25 cups Almond butter
Olive oil (or coconut oil) spray
Directions
1. Preheat oven to 350 F
2. Mix eggs, coconut milk and almond meal
3. Lightly spray non-stick silicone baking cups with oil
4. Scoop egg mixture into baking cup until each cup is around half full
5. Add approximately 3/4 tbs of almond butter into each baking cup
6. Add 3-4 berries into each baking cup
7. Bake for around 15 minutes, or until firm when pressed
